
When I was a young woman, I couldn’t give a Goobbue’s hiney about food. I mean, I ate, obviously, but I didn’t really care what I ate. Heading off to fight a dragon? Great, let’s have a Parsnip Salad with a side of Mashed Popotoes. Didn’t really matter to me.
That was a long time ago, of course, and I’ve grown wiser about what I consume and when. I know that what you’re eating has to fuel you the right way for what you’re doing. A bright and spicy dish with some meat to it is what I needed, now and then. I was reminded of all this as I recently started looking at old photos, trying to curate the tomestone record of me a bit.
As such, I’ve been inspired to share a little bit of my culinary knowledge, such as it is, as a little side project. I dunno. Could be fun, y’know? So, indulge me a little as I share with you my first recipe:
Tacos Al Pastor
- Pineapple – 1/3 cup chopped (I like big chunks, but to each their own!)
- Chili Sauce – 4 tbsp
- Hard or Soft Shelled Tacos – 2
- Onion – 1/4 diced
- Alpaca Fillet , ground(any meat will do) – .5 Ponze
- Lemon (or lemon juice)
- Diced Tomato – 1
- Cooking Oil – 2 tbsp
- Throw the cooking oil into a pan and bring to a medium/high heat (about 5 minutes) before tossing in the onion. If your onions aren’t sizzling the moment you throw them in, it’s not hot enough yet.
- Once the onions have been sweated down to a translucent brown color, add in your ground meat and cook until browned and you’re seeing some color on the bottom of the pan. Don’t worry! It’s not burning, that’s just beautiful and delicious flavour on the bottom of your pan waiting to be released. (Optional: You could also throw in some diced garlic here, and a little bit of oregano if you’re feeling adventurous!)
- Once the meat is browned add your chili sauce, diced tomato, and a splash of water. This will loosen that delicious flavor from the bottom of the pan and add some richness to the dish. Let this simmer so the flavors blend for 5-7 minutes.
- Evenly scoop mixture into each taco shell, and top with pineapple chunks. Squeeze some lemon juice onto each and voila!
- Optional Pairing: I like to enjoy mine with either Lemonade, or Dragonfruit Juice.
